- Preheat oven to 425 degrees.
- Line a baking sheet with foil and non-stick cooking spray.
- Place 12 corn tortillas on the baking sheet.
- Toast in oven for approximately 5 minutes, then let cool.
- Break toasted tortillas into pieces and place into a food processor.
- Dice two jalapeno peppers and put them in the food processor.
- Add 4 teaspoons of lime juice, 1/2 cup of cilantro, 1 teaspoon of cumin, and 1 teaspoon of chili powder to the food processor.
- Pulse until mixture resembles crumbs. Season with a pinch of salt and pepper.
- Place two beaten egg whites into a separate bowl.
- On a plate, spread out the tortilla mixture.
- Spray non-stick cooking spray on the baking sheet already lined with foil.
- Dip tilapia fillets into the egg whites, then press both sides into the crumb mixture.
- Place tilapia on the cooking sheet.
- Bake for 7 minutes.
