Pork Tenderloin Wrap

  1. Chop 2 tablespoons of garlic, 2 tablespoons of ginger, and 1/2 cup of green onions
  2. Combine garlic, ginger and green onions with 1/2 cup of Hoisin sauce and 1/2 cup of red wine in a bag.
  3. Place 1 pork tenderloin in the bag, and let it marinate for 1 hour.
  4. While pork is marinating, mix 1/2 cup of coleslaw, 1/2 of a chopped tomato, 1/4 cup of cucumber, and 1/4 cup of carrots to create a salad.
  5. Remove pork from marinade and grill or cook in a pan until internal temperature reaches 140 degrees.
  6. Place pork on plate with coleslaw salad and top salad with 1 teaspoon of low-fat salad dressing.
