Rotisserie Chicken with Garlic Spinach

  1. Preheat oven to 350 degrees.
  2. Finely chop 1 clove of garlic. Separate 1 teaspoon for use, and save the rest for another recipe.
  3. Saute spinach in 1 teaspoon of chopped garlic, 1 pinch of salt, 1 pinch of pepper, and 1 teaspoon of olive oil.
  4. Cook couscous as directed on box.
  5. Place 1/8 cup of almonds on a baking sheet and place in the oven for 5 minutes.
  6. Cut up store-bought rotisserie chicken into a 3-ounce serving.
  7. Combine with 1/4 cup of dried cranberries and toasted almonds.
  8. Plate and serve with couscous.
