- Preheat oven to 350 degrees.
- Finely chop 1 clove of garlic. Separate 1 teaspoon for use, and save the rest for another recipe.
- Saute spinach in 1 teaspoon of chopped garlic, 1 pinch of salt, 1 pinch of pepper, and 1 teaspoon of olive oil.
- Cook couscous as directed on box.
- Place 1/8 cup of almonds on a baking sheet and place in the oven for 5 minutes.
- Cut up store-bought rotisserie chicken into a 3-ounce serving.
- Combine with 1/4 cup of dried cranberries and toasted almonds.
- Plate and serve with couscous.
