Turkey Casserole

  1. Preheat oven to 350 degrees. 
  2. Lightly grease a 9 x 13-inch baking dish. 
  3. Melt 3 tablespoons butter in a saucepan, add 2 tablespoons of chopped onions, and cook until soft. 
  4. Blend in 2 tablespoons of all-purpose flour, and slowly stir in 1 cup of evaporated non-fat milk. 
  5. Season with 1/4 teaspoon of salt and 1/4 teaspoon of pepper. Stir over low heat for 5 minutes. 
  6. Spread the 2 cups of mashed potatoes on the bottom of the baking dish, followed by 1 cup of diced turkey. 
  7. Pour the butter sauce over the turkey. 
  8. Sprinkle 1/2 cup of shredded cheddar cheese over this mixture, reserving the other half. 
  9. Spread the stuffing on top and sprinkle with remaining 1/2 cup of cheese on top of stuffing. 
  10. Bake for 45 minutes and serve.
