- In a large, two-handled pot mix extra virgin olive oil, carrots and onions. Cook over medium-high heat for two minutes.
- Add 2 packages of ground turkey and mix together.
- Add three seasoning packets, 1 can of diced tomatoes and 1 can of tomato puree. Stir together and lower heat to medium-low setting.
- Stir for 5 to 7 minutes. Add 1 can of black beans. Season with salt and pepper to taste.
- Place a serving in a bowl for yourself (refrigerate the rest for other meals).
- Microwave a high-fiber tortilla for 25 seconds. Place a serving of chili in the middle of the tortilla.
- Top with 1 tablespoon low-fat cheese of your choice. Roll up burrito-style.
- Serve with a side of sliced cucumber, carrots and vegetables with 2 tablespoons of hummus for dipping.
- Serve with salsa if desired.
- After separating your serving, place the rest in the refrigerator for another meal.
