Mexican Sloppy Joes

  1. Preheat the broiler to high. 
  2. Heat 2 tablespoons of extra virgin olive oil in a pan over medium-high heat.
  3. Add 1 pound of ground turkey breast to the pan. Break it into smaller pieces as you cook.
  4. Cook turkey until lightly browned (about 5 minutes).
  5. In a food processor, mix 16 tomatillos. Pulse until they're in small pieces.
  6. Add 2 tablespoons of extra virgin olive oil.
  7. Stir tomatillos in with the turkey.
  8. Mix in 1 chopped onion, 1 clove of minced garlic, 1 chopped jalapeno, 1 tablespoon of cumin, the zest from 1 lime, 1 tablespoon of oregano, 1 chopped poblano pepper, salt and pepper.
  9. Continue to cook for 2-3 minutes.
  10. Add the chicken stock, bring up to a simmer and cook for 5 minutes. 
  11. In a small bowl, mash together 2 chopped avocados and the juice from 1 lime. 
  12. Slice 1 red onion, and chop 2 tomatoes.
  13. Toast 4 whole wheat buns until slightly charred.
  14. Assemble the turkey, and top with the lettuce, tomato, onion, and avocado.
  15. Serve with your choice of side or alone.
