Oven-Fried Shrimp

  1. Preheat oven to 450 degrees.
  2. Place 1/4 cup flour in a shallow baking dish.
  3. Beat 1 large egg and 1/2 cup of buttermilk in a medium bowl. Whisk the remaining 1/4 cup of flour, 1/4 teaspoon of cayenne pepper, 1/2 teaspoon of salt, and 1/2 teaspoon of pepper into the buttermilk mixture.
  4. In a food processor, pulse 30 saltine crackers and 4 cups of kettle-cooked potato chips until finely ground.
  5. Put ground chips and crackers into a shallow dish.
  6. Working one at a time, dredge each piece of shrimp the flour (shake off any excess).
  7. Dip shrimp in the buttermilk mixture (allowing the excess to drip off), then roll shrimp in the chip and cracker dish (coat evenly with crumbs).
  8. Put shrimp on a plate.
  9. Pour 3 tablespoons each onto rimmed baking sheets.
  10. Place baking sheets in the oven, and heat until just smoking (about 8 minutes).
  11. Carefully tilt the baking sheet to make sure it's coated in oil., then arrange shrimp in a single layer on the sheets.
  12. Bake for 10 minutes (flip after 5 minutes).
  13. Transfer to paper towels to drain and cool before serving.
